Pickled Peppers

Well, we’ve been harvesting our garden lately, and we have a bounty of peppers; cherry peppers, green chilis, and jalepenos. I love me some pickled peppers, so The Lovely Wife and I decided to try our hand at pickling a few jars.

Pumpkin Bread

2 cups all-purpose flour
2 teaspoons cinnamon
1 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1 1/2 cups sugar
3/4 cup vegetable oil
3 large eggs
1 teaspoon vanilla extract
3 cups shredded fresh pumpkin
1 cup toasted pumpkin seeds

Zucchini Bread

2 c. sugar
1 c. vegetable oil
2 eggs
2 c. grated zucchini
1 tsp. salt
1 tsp. baking soda
1/2 tsp. baking powder
3 c. flour
3 tsp. cinnamon
Blend all ingredients together. Bake in greased loaf pan at 350 degrees for 1 hour or a toothpick comes out clean. Slice warm and serve with butter. Yum.
